We meticulously hand trim and cure the freshest North Atlantic Salmon filets, then cold smoke them in our European-style smokehouse. The result is a buttery, melt-in-your-mouth Nova, sliced paper thin, with the perfect balance of moisture and silkiness. “Nova” refers to both the geographical location where the fish is caught (Nova Scotia) and the style of smoked salmon, in which the fish is first cured and then lightly smoked. This thinly sliced delicacy is ready to serve to place onto bagels, crackers, or anything you choose.
Best Way to Eat There's no one set way to serve smoked salmon lox. It can be eaten alone or combined with any flavor combination you desire. Smoked salmon recipes typically include capers, sliced lemon, snipped chives & herbs, or even caviar. Keep it simple and serve with cream cheese and fresh bread.

Nice size, meaty slab. As a fan of dry rubbed ribs these are perfect. Nice flavor.

A slight unexpected sweetness that puts this over the top. Also, the salmon is a bit firmer than any nova I've ever had and slices are a bit thicker - both of which make this perfect. Will be ordering again.

The wife loves it in her salad, and the sandwich she makes with it.
