Skill Level: Medium - some mixing, layering and loaf confidence required
Ingredients
Sugartown Star Ingredient:
- 1 (4 oz) package Sugartown’s Nova Style Smoked Salmon
Dry Ingredients:
- 2½ cups (300 g) all-purpose flour
- 2 teaspoons (10 g) baking powder
- 1–1½ teaspoons (4–6 g) salt
Wet Ingredients:
- 2 tablespoons (28 g) unsalted butter, melted
- 1¼ cups (383 g) Greek-style yogurt
- ¼ cup + 3 tablespoons vegetable oil
- 2 large eggs (113 g each), room temperature
Cream Cheese Filling:
- ½ cup cream cheese, room temperature
- ½ cup chives, finely chopped
- 1 large egg (56 g), room temperature
To Finish:
- 1–2 tablespoons Everything Bagel Seasoning, for topping
Baking Instructions
1. Prep the Oven and Pan
Preheat your oven to 375°F (190°C) with the rack in the center. Grease a loaf pan with nonstick spray. Optional tip: line the pan with a foil sling on two sides and spray that too - this will help you lift the loaf out easily.
2. Make the Dry Mixture (Bowl 1)
In a medium bowl, whisk together the flour, baking powder, and salt.
3. Mix the Wet Ingredients (Bowl 2)
In a large bowl, whisk together the vegetable oil, melted butter, eggs, and yogurt until smooth and well combined.
4. Make the Cream Cheese Filling (Bowl 3)
In another medium bowl, mix together the cream cheese, chopped chives, and egg until smooth and spreadable.
5. Combine the Batter
Add the dry ingredients into the wet ingredients and stir until the batter just comes together. Don’t overmix!
6. Layer the Loaf
- Divide the batter in half. Press one half evenly into the bottom of your prepared loaf pan.
- Next, layer half of the Sugartown’s Nova Style Smoked Salmon in a thin layer over the batter.
- Spread the entire cream cheese-chive filling over the salmon.
- Top the filling with the remaining salmon slices.
- Finish by pressing the remaining batter on top until the salmon and cream cheese layers are completely covered.
7. Finish and Bake
Sprinkle the top generously with Everything Bagel Seasoning. Bake for 40–45 minutes, or until a skewer inserted in the center comes out clean or with just a few moist crumbs.
8. Cool & Serve
Let the loaf cool for 10 minutes in the pan, then carefully unmold onto a wire rack. Cool completely before slicing. Loaf can be wrapped in foil and chilled before serving.
Serving Tip
Serve at room temperature or slightly warm. Slather with butter and pan sear until crispy for a griddled treat. Excellent with a side of pickled onions, herby greens, or a smear of extra cream cheese if you’re feeling indulgent.
