One of our loyal Sugartown Smoked Specialties customers, inspired by the rich, smoky flavor of our signature smoked pheasant, shared this incredible customer recipe who shared their Pheasant Stroganoff. This dish marries the traditional warmth of stroganoff with the unique taste of Sugartown Smoked Pheasant, creating a meal that’s an interesting twist to comfort food.

Smoked Pheasant Stroganoff Recipe

Ingredients

  • 1 Sugartown Smoked Pheasant, shredded or cut into bite-sized pieces

  • 7 slices of bacon (reserve fat)

  • 3 tablespoons butter

  • 4 medium onions, diced

  • ¼ pound mushrooms, sliced (button or cremini)

  • 2 cloves garlic, minced

Dry Seasoning Mix: 

  • ¾ cup all-purpose flour 

  • 2 ½ teaspoons of dry mustard 

  • ¾ teaspoons, dried thyme 

  • ½ teaspoon, ground pepper 

  • 1 ½ teaspoons, salt 

Stroganoff Sauce

  • 1 pint Buttermilk (as needed) 

  • 1/4 cup sherry (optional, or substitute with chicken broth)

  • ½ cup sour cream or Greek yogurt

  • 1 1/2 cups chicken or pheasant broth

Serving: 

  • 12 ounces egg noodles or your pasta of choice

  • Fresh parsley, chopped (optional, for garnish)

 


 

Instructions

  1. Cook the Pasta: Cook egg noodles according to package instructions. Drain, toss with a bit of olive oil to prevent sticking, and set aside.

  2. Sauté the Bacon In a large skillet, fry the bacon and let the fat render until crisp. Drain the fat (reserve), and cool bacon. Crumble and cool. Then add 2 tablespoons of bacon grease and melt the butter over medium heat. 

  3. Mix & Brown Pheasant: In a bowl, mix the flour, mustard, thyme, pepper and salt together and save. Pull the thawed smoked pheasant into bite size pieces. Roll the pheasant pieces in the flour and add to the butter and bacon grease. Brown the meat in batches using 2 tbsp of the bacon grease each batch and wipe out the skillet between batches. Drain meat on paper towels. When all the meat is browned, wipe out the skillet. 

  4. Cook the Mushrooms: Add bacon grease to the same pan. Add the diced onion and cook until soft and translucent, about 5 minutes. Stir in the garlic and cook for another minute until fragrant. Add the sliced mushrooms to the skillet and sauté until golden and softened, about 5 minutes.Take out of the pan and reserve. 

  5. Make the Sauce: Sprinkle the remaining flour over the mixture and stir well to combine. Slowly pour in the broth and sherry (if using), whisking to prevent lumps. Simmer for 5 minutes, stirring occasionally, until the sauce thickens.

  6. Fold in the Pheasant: Stir back in the Sugartown Smoked Pheasant pieces. Cook for 2-3 minutes to warm through. Add mushroom mixture.

  7. Add Creaminess: Reduce the heat to low and stir in the sour cream. Mix until smooth and heated through, but avoid boiling to prevent curdling. Stir in crumbled bacon, season with salt and pepper to taste.

  8. Combine and Serve: Toss the cooked noodles into the skillet with the stroganoff sauce, mixing well to coat. Add more broth to adjust sauce consistency (if needed). Serve hot, garnished with fresh parsley if desired.
