Smoked Olive Oil Marinated Peppers Recipe

Smoked Olive Oil Marinated Peppers. Ingredients: 5 ea. Red, Yellow, Orange Peppers, 2 ea. lg. sprigs fresh Basil (plus for serving), 3 ea. Garlic cloves, finely grated, 1/3 cup EVOO, 1/4 cup Smoked EVOO, 1/2 tsp Salt, 1/4 cup Balsamic or Red Wine Vinegar.

Method: Heat broiler on a foil-lined rimmed baking sheet or roast on high heat grill until sides are charred. Immediately, place in a small bowl and top tight with plastic wrap. Let cool and then remove and discard skins. Tear in 1/2 and cut peppers into 1/2"-wide strips. Place back in a bowl with juices, set aside. Cook EVOO & garlic until fragrant, pull off heat. Add to sliced peppers. Finish by adding smoked EVOO, vinegar, basil and salt. Top with fresh basil before serving.
