Whether you’re hosting friends in the backyard, heading to a picnic in the park, or throwing together something special for a weekend hangout, this spread hits all the right notes.

At the heart of it all? Sugartown’s Smoked Tasmanian Trout—a buttery, smoky showstopper that’s like salmon, but better. Hand-cured and hot-smoked over hardwood, it brings a rich, savory depth that pairs beautifully with seasonal veggies, fresh herbs, and crusty breads.

It’s light, fresh, and ready to serve—no cooking required. Just open, plate, and enjoy with chilled wine or sparkling water and good company.

The Centerpiece:

Sugartown’s Tasmanian Smoked Trout (½ to 1 lb, depending on guests and appetite)

16 oz Hummus of your choosing 

DIY Crispy Roasted Chickpeas 

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika 

Line a sheet tray with foil and coat with cooking spray. Coat the canned chickpeas with seasoning and bake in a 350 degree F oven until cooked and dry. Roughly 15-20 minutes. You can leave in oven turned off for up to 5 minutes to get the crunch you desire. 

Creamy + Dreamy Yogurt Sauce: 

  • ½ cup Greek yogurt (2% milk or Fage dairy free
  • 2 tablespoons mayonnaise, better quality use Hellmann’s or Duke’s
  • 1 ½ teaspoons lemon juice (Meyer lemon if you can find at the store) 
  • 1 teaspoon dried garlic powder 
  • 1 tablespoon of fresh chopped dill or ½ teaspoon of dried
  • ½ teaspoon of salt, kosher

Mix ingredients well. Refrigerate until use. 

Spring Veggies & Bright Bites:

  • Cherry tomatoes, sliced in half
  • Cucumber ribbons or rounds 
  • Sliced radishes (optional) 
  • Fresh herbs like dill, mint, or chives

Breads & Crackers:

  • Mini Pita or sliced triangles Sourdough crostini
  • Buttery crackers or seeded flatbreads

Continue To Impress: 

  • Add a small bowl of berries or sliced fruit for sweetness
  • Place on top edible flowers (optional, but stunning!)
  • Include lemon wedges (our favorite) for brightness

How to Assemble with Love

  1. Spread your favorite creamy hummus. Using a large spoon move back and forth across the board or platter to spread across the area you want to build your palette. 
  2. Layer in your veggies and herbs. Think in little clusters, tucking in pops of color and flavor around the board.
  3. Start with the smoked salmon. Fold or flake it gently and arrange it front and center on your favorite platter or board.
  4. Tuck in the breads. Arrange crackers, and pita slices in fan shapes for easy grabbing.
  5. Finish with thoughtful touches. A sprinkle of fresh herbs, a flourish of edible flowers, or a sweet note tucked beside the board can go a long way.

  • The yogurt sauce can be made up to 3 days ahead of time and stored in the refrigerator. 
  • The salad can be prepared up to 3 hours ahead of time and stored in the fridge.
  • The chickpeas are best made before serving, but they can be prepared up to 3 hours ahead and stored at room temperature; if necessary, you can crisp them back up by reheating in a 350°F-oven until hot. 
  • The hummus board is best assembled right before serving.
