Recipe Ingredients

For the Salad:

  • 2–3 medium to large carrots, peeled and shaved into ribbons

  • 2 shredded little gems lettuces, or a few good handfuls of baby lettuce

  • Handful of parsley, chopped

  • 3 tablespoons fresh mint, chopped

  • 6 tablespoons cashew nuts, toasted (or choose one you love!) 

 

For the Mediterranean-Style Dressing:

  • 4 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 2 tablespoons red wine vinegar

  • 1 tablespoon runny honey (Keto solution: monk fruit sweetener or liquid stevia for the easiest substitution)

  • ½ teaspoon garlic powder 

  • ½ teaspoon smoked sweet paprika

  • ½ teaspoon ground coriander

  • ¼ teaspoon ground cumin

  • ¼ teaspoon dried oregano

  • ¼ teaspoon kosher salt

  • ¼ teaspoon freshly ground black pepper

Instructions

Toast the Nuts:

In a clean skillet over medium heat, toast the cashew nuts or your favorite to add crunch, stirring occasionally, until fragrant and golden brown — about 7 minutes. Remove from heat and set aside to cool.

Prep the Salad Base:

In a large bowl, toss the shaved carrots with a few tablespoons of the dressing. Massage gently to begin softening the carrots. Cover and refrigerate for at least 30 minutes to marinate and allow the flavors to develop.
